Loaded Veggie Fried Rice


Loaded Veggie Fried Rice (Serves 3 Hungry Adults)



Ingredients:


  • 4 cups cold cooked brown rice
  • 1 medium yellow onion, diced
  • 1 ½ cups frozen peas and carrots mix (or ¾ cup each)
  • 1 medium zucchini, diced
  • 3 cloves garlic, minced
  • 3 tablespoons low-sodium tamari or soy sauce
  • 1 tablespoon rice vinegar
  • 1–2 teaspoons sesame seeds (optional)
  • Optional Add-in:
    • 1 block (14 oz) firm tofu, crumbled
    • 1 teaspoon turmeric
    • Black pepper to taste





Instructions:


  1. Sauté veggies:
    In a large nonstick skillet or wok, sauté diced onion over medium heat with a splash of water or broth until soft (about 5 minutes). Add peas, carrots, and zucchini. Cook until just tender, about 5–7 minutes.
  2. Add garlic:
    Stir in minced garlic and cook 1–2 minutes until fragrant.
  3. Add rice:
    Add the cold brown rice. Break up any clumps and stir well to combine with veggies.
  4. Flavor it:
    Pour in tamari and stir to coat everything evenly. Cook for another 3–5 minutes, stirring occasionally.
  5. Scramble tofu (optional):
    If using, crumble tofu into the pan. Season with turmeric and pepper, and cook for another 5–7 minutes, until lightly golden.
  6. Finish:
    Drizzle with rice vinegar and sprinkle with sesame seeds before serving.

Planner Fun Plus in 2025

Planner Fun first started in 2014 when I discovered the world of planners.  Having always loved some form of graphic design (although we certainly didn't call it that "back in the day"),  making inserts and other printables was something I thrived on.

Wow, so many changes in 10 years!  I've raised and homeschooled and married off (one of) my boys and my day to day life looks very different than it did in t he earlier years.  Once they graduated, my need for a planner dwindled dramatically and I kind of miss it.  I'll set up one every once in awhile just to have it sit unused.

My son gave me a tablet and I shifted my interest a bit to digital planners.  I don't mean calendars and apps on my phone, but using linked pdf planners on a tablet using an annotation app such as Good Notes or Noteshelf.  I use this type of planner quite a bit to keep up with information such as meal planning, finances or even church notes and things like that, but I'm back to my phone, by using a widget, to keep up with appointments and even some tasks.

As you know, my blogging has dwindled down over the last few years, so much so that I don't really see the need to keep up with the domain, but I don't want to entirely nix the idea of having a place to share.  Since the domain expires soon, I decided to try and move everything back to blogger.
